Why is there a difference between digital printing and plate printing projects?

Digital printing uses computer-controlled CMYK printing. All elements of the design are CMYK, and it is not possible to select the ink color individually, using topical gloss, UV or matte varnish. When using digital printing, the bag must be all matte or all glossy.
